As the subject was somewhat neglected while being treated as a history matter, the source is crucial for its richness in information. The role food has been playing on the political, and environmental matters is also a key point this book provides for this research, as it will help to create a connection in between past and future perspectives. To support his theories the author used numerous case studies throughout the globe to examine how food helped to create an identity to each society, or a region all together. With that he tries to explain how and why each region developed a certain type of cuisine, and how that lasted thru the years, like the Italians, Chinese, and Latin America.
